The Salon des Ambassadeurs at the Palais des Festivals in Cannes recently hosted the Heavent trade show, bringing together key players from the event industry in France and across Europe. Catering was orchestrated by Pavillon Traiteur for a high-end networking cocktail reception for 800 guests, blending elegance, excellence and culinary creativity. In this iconic Côte d'Azur venue, our Maison deployed its full expertise to transform a professional evening into a truly immersive gastronomic experience.

Organizing a networking cocktail at the Palais des Festivals on this scale requires precise coordination, impeccable logistics, and, above all, passion. Our project managers - true conductors of the event - designed and managed every detail, from the layout of the food stations to the pace of the service.





A team mobilized with passion


This success was made possible thanks to the dedication of more than 60 team members, including:

  • Cooks and pastry chefs behind the scenes, preparing refined dishes in real time,

  • Chefs in direct contact with guests, sharing product stories and finishing plates live,

  • Attentive and elegant maîtres d'hôtel and service staff, ensuring seamless and warm service.



A creative, local and colorful flavor trail


Cold Stations: freshness and bold plant-based flavors


The reception began with a selection of refined cold creations inspired by Mediterranean influences and local specialties:

  • Beetroot and quinoa tartare, enhanced with citrus zest and coriander,

  • Mini basket of raw vegetables served with lemon hummus,

  • Pissaladière, Pain Bagnat, or even a Nice-style "galet" with goat cheese - an homage to Niçoise flavors,

  • Shortbread with vegetable pickles and truffle cream, a subtle combination of crunch and sweetness.


Hot creations: a score of mastered flavors


Our hot stations highlighted premium ingredients, cooked to order by our teams:

  • Crispy cod cheek in Panko breadcrumbs with tartar sauce,

  • Lemon and thyme marinated chicken supreme with seasonal vegetables,

  • Confit eggplant, a salmon croque on black bread, or even truffle croque - signature pieces from our hot workshops.


Sweet bites: a gourmet finishing touch


Desserts brought an elegante and original final note:

  • Mini Tropezienne,

  • Crunchy citrus sphere,

  • Red fruit calisson, a modern reinvention of a Provençal classic.

Live cooking for a multi-sensory experience


At the heart of the event, our culinary entertainment delighted guests through rythtm, craftsmanship, and generosity :

  • Coastal Workshop, where fish and shellfish were elevated on the plancha,

  • Spring Mozzarella, delicately prepared before guests' eyes,

  • Beef fougasse, seared to order,

  • Pasta Puttanesca, served al dente with homemade sauce,

  • Giant cookie and roasted pineapple, flambéed to order.
